1 16 ounce bag of tater tots, plain or seasoned
1 lb. ground beef
1 can enchilada sauce
1 small onion, sliced
3 cups shredded cheese
Optional Toppings:
Lettuce
Tomato
Black Olives
Sour Cream
Directions:
Brown the ground beef with the onions until it is fully cooked.
Drain.
Add the enchilada sauce into the ground beef.
Let simmer a bit to infuse flavor into the meat.
Preheat the oven to 350 F.
Spray a 9 x 13 pan with cooking spray.
Spread the tater tots evenly over the bottom of the pan.
Mix 2 Cups of cheese into the beef mixture.
Pour the Beef and cheese mixture over the tater tots.
Top with the remaining 1 cup of cheese.
Bake at for 30 minutes.
Top with your optional toppings of choice if desired.
