Honey Lime Shrimp (For 2)


Ingredients:
1/2 pound large shrimp, peeled and deveined
1/4 cup olive oil
2 TBS. honey
juice of one small lime, or half a large lime (2-3 TBS.)
zest of one small lime, or half a large lime
2 cloves garlic, smashed
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp red pepper flakes


Directions:
In a large ziploc bag, combine all the marinade ingredients. 
Mix well.well.
Add shrimp.

Squeeze as much air out as possible and re-close.
Place in refrigerator for 30-60 minutes.
Turn bag a few times during this process. 

Take shrimp out of the fridge and let sit at room temperature for about 10 minutes. 

Heat an oil free large skillet over medium-high heat.
* If you would prefer to use a grill, thread onto skewers and place them on the grill.

Add your shrimp to the pan in a single layer, without over crowding.
Cook on one side for about a minute. 

Turn and cook for 30 seconds more, until the shrimp are opaque. 

Remove from pan (or grill), and serve immediately.
