Seared Sea Scallops

Ingredients:
Fresh sea scallops (3 per person for an appetizer or 5 per person for a meal)
2 Tablespoons oil
1 Tablespoon butter
Kosher salt and freshly ground pepper


Rinse scallops and pat dry with paper towel.

Sprinkle both sides of the scallops with salt and pepper.


Pre-heat skillet (preferably a cast-iron skillet). 

Add one to two Tablespoons of oil, or a very thin layer. 
Once the oil gets hot, place scallops in pan one at a time. 

Set timer for one minute and leave alone to sear.

After a minute, turn the scallops and set timer again for one minute. 

At this time, add tablespoon of butter. 
As it melts, spoon melted butter over the scallops. 

Once time is up, remove the scallops immediately and serve.
