Grilled Lemon-Mustard Chicken Breasts


Ingredients:
1/4 cup Dijon mustard
1/4 cup coarsely ground mustard
1/4 cup German mustard
1 and 1/2 Tablespoons fresh lemon juice
1/4 teaspoon freshly grated lemon zest
1/4 cup white vinegar
1/3 cup apple juice
1 shallot, peeled and sliced
1 small clove garlic, minced
1/4 tsp. coarse ground black pepper
4 boneless, skinless chicken breasts (approx. 1 lb. total)

Mix all the ingredients together in a shallow bowl, except meat. 
Add chicken.
Turn to coat well.
Cover.
Place in refrigerator for 2 to 4 hours to marinate.
Turn meat a few times during this process.

When ready to grill, remove chicken from bowl and discard marinade.
Place chicken on lightly oiled preheated grill. 
Cook until meat is no longer pink in center, about 3-4 minutes on both sides.
